The Dream League IS a canon thing, to be fair. It was introduced in S3 of the Pretty Derby anime as a thing Gold Ship can move onto when she retires. We just have very little specifics about it beyond "special racing league for popular retired runners." And even the "popular" part is dubious.

There is actually another league for adult Uma, called the dream league. I don't think too many details have been released about it because Uma Musume pretty derby is mostly about re-enactments of specific IRL horses careers- with some what-if's thrown in.

I don't think Shiro has been implied to have any specific sexual orientation in her current life. People ship her of course, because people are people, but in story? No interest one way or another. Considering her fairly young age it isn't even really a strong implication towards her being ace or demi.

Still fun to speculate about though.

The strongest emotional response that could have possibly been construed as romance in some faint way was that she had like two good conversations with her trainer's cousin. Even that is reeeaaally stretching it.
Shiro has been to busy training and racing to get her (grand)parents retirement fund up and going to do anything romance related so far.

I agree that we seem to be getting the education and life after racing a little overblown here.

Uma's seem to be more simple than normal Human as a whole, but that doesn't means they are stupid, just with different goals, I don't think that many of them would like to be in an office.

And while normal human might consider some of those jobs as lesser, Uma's are like more to be outside, racing if they can, and even lifting and other psychical related jobs are probably more enjoyable to them.
I also believe that being a trainer must be really hard but, not everyone needs to be one, there would be plenty of other jobs that are related and don't need you to be a full time trainer.
Uma's do seem to be hit hard by their biological clock and, the need to have kids once they reach certain age, and I haven't seen one who isn't good looking so getting married wouldn't be hardfor most of them.
Shiro and few others would be the oddballs wanting an office and manager related jobs.

And Shiro's being good at taking down other Uma's added to her ability to disappear and jump scare others who don't sense her until she's too close might actually have someone think she's a Shinobi sooner or later, Ninjas are a thing here.

So a conspiracy that Shiro was actually trained as an assassin/spy is something that the some of the girls might like to gossip about.

In the game/anime should be a subplot about Shiro being obviously ninja trained in secret... With Haru Urara being higher ranked ninja - nobody would suspect happy goofball until she put pink bodysuit with jonin jacket

I'm not quite sure I'm parsing what she was peer pressured into correctly. Is it that she'll have to skip the most favorable Tiara qualifier (the Tulip Sho) to run the Yayoi Sho as her Crown qualifier? So her original plan was to run the Tulip Sho and then either the Spring or Wakaba Stakes?

Short answer: yes.
Long answer: yes, and she screwed herself strategically by doing so.

Due to scheduling conflicts, Shirogane only has FOUR shots total, not six. If she wins entry to one circuit early, then she can have three shots at the other, but the first race choice (G3 Tulip vs. G2 Yayoi) locks her into which circuit she is maximizing shots for. Since Shirogane is stronger at longer distances, trading a shot at Tiara for a shot at Crown is bad; she should be maximizing her chances to get in Tiara by giving herself all three chances to get in. Worse, by doing so, she has traded a G3 race for a G2 race. Worst, said G2 is SUPER COMPETITIVE because all of her classmates are going for it.

She has traded her best shot at Tiara for her worst shot at Crown.
